I realize I am one of millions who loves grilled cheese sandwiches. How do I know? Because there is actually a National Grilled Cheese Sandwich Day (yes, that really is a thing), which is observed annually on April 12th. AND there used to be a Grilled Cheese Invitational, which I’m heartbroken I never got to attend, the last one having taken place in Los Angeles in 2014. Maybe I’ll just have to plan my own…

Why Grilled Cheese

Do I really have to explain the call of the grilled cheese sandwich? The ooey-gooey cheese, the crispy-crusty, toasted bread and the melt-in-your-mouth butter pretty much speak for themselves. This nostalgic, American childhood staple is so popular with adults there are now entire restaurants across the country devoted to grilled cheese.

Apparently some people love grilled cheese so much that they are driven to violence. Earlier this year, a man shot his wife after he became angry when she took a bite out of his grilled cheese sandwich. If you don’t believe me, check out the article HERE.

For those of us lacking culinary skills, the grilled cheese is a godsend. With or without its frequent companion tomato soup, it’s delicious and almost impossible to screw up unless you burn it, which is pretty hard to do because it smells so good that the anticipation of devouring it makes it hard to get distracted and forget you’re cooking it. (This happens to me more frequently than I would like to admit.)

The best grilled cheese I ever made had sourdough bread (my favorite), three types of cheese (the more the merrier), wasabi mayo (for some kick), and – of course – lots of butter. However, the best grilled cheese I’ve ever eaten was composed of brioche, brisket, grilled onions and jalapeños. My mouth is watering just thinking about it.
